Lazy Sunday Sandwich – Cheese, Tomato, Avocado

Lazy Sunday Sandwich

This is a quick prep sandwich for a lazy Sunday afternoon, that your kids will enjoy with or without the avocado.  If I happen to have thick sliced bacon, I will add that too (but not this time).  It’s pretty basic, quick to make and very tasty!

Ingredients:

2 Sour dough english muffins – split

Mayonnaise

Onion Salt or Powder

2 Roma tomatoes thinly sliced

One avocado

4 Tbls. Sharp Cheddar Cheese – shredded

4 Tbls. Colby Cheese – shredded

Chives

Method:

Ready for the broiler

Split english muffins – spread mayonnaise on the 4 muffins and add sliced tomato with a dash of onion powder.   Slice avocado and spread over tomatoes – sprinkle with both cheeses, add touch of paprika, and top with the chives.

Broil in oven until cheese is melted and starting to brown.   Serve open-faced.

Yield:  4 open-faced sandwiches

    Greetings, yum…..and a quick variation, start with a dab of dijon mustard on your english muffin, a slice of boiled ham then the sliced tomatoes, with or without avocado and top with cheese under the broiler. Hmm. Fran
