Beignets

When you find yourself at the end of the day in need of something sweet, with a creamy texture inside, and yet light, then look to The Beignet.   A beignet is basically a pastry dough that is deep fried – similar to a doughnut, but oh so much more!

Here is a basic recipe that you can serve plain, or with raspberry preserves, or lemon curd.

Ingredients:

  • 1 stick butter – melted
  • 1 cup flour
  • 1/4 tsp salt
  • 1 cup milk
  • 1 tsp vanilla
  • 4 eggs
  • 1/2 cup confectioner’s sugar for dusting
  • Vegetable oil for frying

Mix together flour, salt, melted butter, vanilla, and milk.      Add the eggs one by one and stir until the batter is well mixed and the surface is shiny.

Drop by teaspoonfuls into the vegetable oil and fry for 2 minutes, turn over, and one minute more on other side.

Remove with strainer, place on paper towel, and dust with confectioners sugar.
