This was the first canapé my Mother taught me to make at about age 10. Very simple to make, takes only minutes, and will disappear quickly, so save one for the Chef!
INGREDIENTS:
One Baguette
¾ cup Mayonnaise
¾ cup Pecorino Romano Cheese – grated
4 Tbl chopped chives
2 cloves garlic – mashed
2 Tbl chopped parsley
METHOD:
- Slice the baguette into thin slices. Pour olive oil on cookie sheet, place slices down, turn over once to coat both sides with oil and add salt. Bake at 400 degrees for 3-4 minutes on each side, or until lightly browned.
- Mix together the mayo, cheese, chives, parsley and garlic.
- Remove slices from oven and top each slice with mayo/cheese mixture (about 1 tsp on each) – add sprinkle of paprika and a few chives on each slice.
- Put under broiler until bubbly and golden brown on top – about 3 minutes. Serve immediately.
Serve: Approximately 36 baguette slices
