Cucumber and Red Onion Salad

We had gorgeous hot weather last week in the Pacific Northwest.  This called for a variety of salads, the following being a really simple side-dish salad that is great served alongside a burger or hot dog.

Ingredients:

2 English cucumbers (sparsely peeled) and slice thinly

1 medium size red onion – sliced into thin rings

1 cup Sherry vinegar

2 Tbl of fresh dill, chopped finely

1 Tbl of parsley (I use from a jar found in salad section)

1 Tsp of sugar

Salt to taste

Method:

  1. Add sliced cucumbers and red onion rings into bowl.
  2. Combine the vinegar, dill, sugar, and salt – whisk it –and pour over the cucumbers.
  3. Marinate it for an hour in the refrigerator and serve.

Serves:  6-8 people
